Tri - Colour Laddu - 402




Indian Flag Recipe 


Kesari is a famous festival recipe. We can prepare various kesaris like pineapple kesari, nuts kesari, plain kesari fruit kesari, beetroot kesari .. Always i would like to prepare this colourful flag recipe 
...this colour laddoo attracts the kids and they eat well.






Tricolour Kesari

Ingredients
Rava / semolina   = 100 + 100 + 100
Sugar – 75+75+75
Ghee – 3 tbspn
Cashew nut, Badam – 50 crushed and roasted into ghee
Grated carrot – 2 tbspn
Butter – 3 tbspn
Hot water – 200+200+200 ml
Kiwi and strwberryflavor tang – 1 tbspn
Pista ilachi essence – 2 drop or green food coloring
Kesar food colouring – few drops

Salt – ¼ pinch
 Method for tricolor kesari

For carrot rava laddo/kesari

Melt the butter and  roast  the  rava (semolina) and carrot over medium heat , slightly brown
Meanwhile in another pan, bring to boil the water and add red food colouring and pinch of salt.
Reduce the heat and pour the boiling water in to the roasted semolina and stir continuously for 5 to 7 min .
 Add the sugar and stir for 3 minutes. 
 Finally add the crushed badam, cashew. Transfer it to a serving plate.
Let it   cool and make it into small balls  or desired shapes.


For Plain kesari

Melt the butter in pan Roast rava over medium heat.  slightly brown
Meanwhile in another pan, bring to boil the water with pinch of salt
Reduce the heat  pour the roasted rava stir continuously  for 5 min.
Add sugar stir for 3 minutes
 Finally add crushed badam cashew and ghee mix it well
Transfer it to a plate Let it cool and make it into small balls or desired shapes








Kiwi Flavour Green Ladu
Melt the butter in a pan roast rava. slightly brown
 Meanwhile in another pan, bring to boil the water and add pista ilachi essence  kiwi tang and pinch of salt
Reduce the heat    Pour boiling water into the roasted rava stir continuously 5 min
Add sugar crushed badam pista, sand ghee.
Transfer the kesari into a plate
Let it  cool and make it into small balls or desired shapes.
And arrange it like a flag
This green colour kesari is super hit in my home

Its very easy and quick
 Suitable for lunch box also.

Masala Tea / Chai - 2


சுட சுட மசாலா சாய்#குளிர்காலத்துக்கு இதமானது.

Masala Chai (Masala Tea/Masala Chayaa) is perfect drink for this cool winter season
Excellent remedy for sore throat.
For Tea Masala Powder
Dry ginger powder - tspn
Whole black pepper – 5 nos
Clove – 1 optional
Palm sugar- 3tspn or normal Sugar
Cardamom – 8 nos
Cinnamon – ½ inch size
(if u have u can add dry tulsi and dry mint)
‪#‎Powder‬ the above dry ingredients.#

For the Chai
Fresh milk 2 glasses
Water – 2 glasses
Tea powder (Lipton) or Brokeband any brand – 3 tspn
Above Powdered masala chai powder - 1 tbspn
Sugar - required qty
How to make Masala Tea/chai


Method
Mix all the ingredients except sugar, heat and boil for about 10 minutes in the medium flame. After boiling strain it through the tea Strainer and add sugar mix it well. Serve it hot.
Serves: 4
Preparation Time : 10 to 15 minutes.

Cucumber Avocado Cold Soup - 400th Post

Cucumber Avocado Cold Soup
Ingredients
Cucumber – 1 no peeled and roughly chopped
Avocado – 1 no peeled and chopped
Curd – 150 ml
Ginger – 1 inch size
lemon juice - 1 tspn
chopped spring onion – 3 stick
Green Chilly – chopped 1 no or capsicum
Chopped Coriander leaves – 1 tbspn
White sesame seeds - 1 tspn
Salt – to taste











Method:-
In a mixie add avocado, cucumber, spring onion, ginger, capsicum blend coarsely.
Add curd and blend it again.
Transfer the soup into a bowl add salt and white pepper mix well. Sprinkle the sesame seeds and chill for half hour.Serve it with any grilled items.

Mutter Dal Vadai - பட்டாணி பருப்பு வடை

Vadai is a South Indian snack. Usually we prepare it with chanadal. Instead of chana dal we can prepareit with mutter dal., Preparing with this dal it is morecrispier than chana dal. During Ramadan fasting time we make this as side dish for nonbu kanji. For more flavor add  mint leaves to this vadai it gives more health benefits. During pongal festival it prepared as side dish for sweet pongal and ven pongal worldwide.for a different variation, we can subsititute chick peas for channa dal to make these vadais.




Ingredients


  1. Mutter Dal ( pattaani paruppu) - 200 gram
  2. Ginger - 2 inch size
  3. Green Chili - 1 no
  4. Onion - 1 no
  5. clove - 1 no
  6. fennel seeds - 1/2 tspn
  7. salt - to taste
  8. curry leaves - few (10 leaves
  9. cinnamon Stick 1/4 inch size


Method

  1. Soak Mutter dhal for 1 hour and drain the water completely.
  2. Divide into 3 portions.
  3. Add saunf, cinnamon, clove , ginger,  with first portion of mutter dhal  and grind  to a fine paste. Set aside.
  4. Coarsely grind  the remaining soaked channa dhal .
  5. Mix  the dal paste,  coarsely ground mutter dal, onion, green chilles and curry leaves together  with a fork. 
  6. Make small  size balls and flatten it slightly with your finger.
  7. Heat oil in a pan and deep fry all them all to golden brown.  
  8.  Drain the excess oil and serve hot. 

Note: Instead of Mutter dal you can use Channa dal
Instead of ginger you can use whole red chilli.

Paleo Diet Meal - Boiled Veggie Stir Fry & King Fish Fry




Paleo Lunch Menu

King Fish Fry
Boiled veggie Stir Fry
Cucumber Salad



Boiled  veggie stir fry
Ingredients

biringal
carrot
zucchini
drumstick
chow chow

 altogether 200 gram

pepper pwd - half tspn
salt - half tsp
lemon juice - 1 tspn
 Curry Leaves - few
Cumin seeds - 1/2 tspn
Extra Virgin coconut oil - 1 tbspn 

Method
Wash and cut the vegetables and then boil with little water & salt. In a wide pan add coconut oil and temper it with cumin and curry leaves add boiled vegetables and sauté well sprinkle with lemon juice and pepper transfer it to a serving bowl! 
Eat this with some soup. Very easy meal for paleo.






King fish fry

Ingredients
200 gram - king fish
1 tsp - Blk pepper and chilli powder
Salt - half tspn
lemon juice - 1 tbspn
gg paste - half tspn
coconut oil - fry frying


Method
Wash and add above masala to fish marinate for 15 minutes.
Heat the pan add coconut oil and keep the flame on medium fire, fry the fish both sides until golden brown.


Eat the veggie and fish fry with cucumber salad as a dinner for paleo diet.

Cut cucumber into round shape sprinkle with salt, pepper & lemon juice.

Recently I have started Paleo diet. I got  very good result  , now I reduced 7 kg weight in three months. I will post some of recipes one by one here later

Tomato Carrot Chutney -2

2016 My First Post


Happy new years friends! I know its long since I've posted few recipes because of very busy schedules.I am too busy with my business Chennai plaza So, whenever Im free,ill post new yummy recipes with extra spiciness fulfilling your expectations here-forth.

I hope you guys would be working out with your new year resolutions to lessen your weight and working out.This is the right time i guess to share my paleo diet recipes which helped me to loose 7 kgs within three months!

Tangy Tomato chutney(dip) side dish for all 

Tomato Carrot  Chutney


for tempering

Gingelly Oil – ½ tspn
Mustard seeds – ½ tspn
Curry leaves - few

For grinding

Ripe Tomato – 3 large
Carrot - 1 no
whole red chilli  - 2 nos
Aachi Red chilli pwd - 1/4 tspn
Garlic -  2 nos
Ginger - 1/4 inch pc
Salt – to taste
jaggery - 1/4 inch pc ( optional)


Method 
In a mixie add tomato, carrot, garlic, ginger, red chilli pwd, salt, whole red chilli ,jaggery
(do not add water) ground well.
 In a pan, heat the oil temper with mustard seeds  & curry leaves.
Add ground tomato carrot mix and cook for 5 minutes till the water absorb.

Healthy Tomato carrot chutney is ready to serve.
It's very good dip for paleo diet and  this chutney goes well with any Snack or South Indian Tiffin items
